PROCESS FLOW CHART
Milk that has passed through the milk acceptance and pre-treatment, pasteurized, dry matter standardized (water ratio adjusted), cream standardized, homogenized, milk is transferred from the outlet area of the plate pasteurizers to the process tank at a fermentation temperature of 40-45 °C. Process tanks; it is cooled, mixed and isolated. In order not to decrease the viscosity of the product, it can be lifted on the platform and transported with its own flow to filling and packaging. In large volume process tanks, special rotary lobe pumps are used for transfer. Buttermilk / Smetana milk taken into the process tank is fermented at fermentation temperature with suitable yeast for the product to be manufactured. Incubation is done in the tank. The product, whose incubation is completed, is taken to cooling. While self-packaged cooling units can be used for cooling purposes, the cold water infrastructure of the enterprise can also be used. The cooled product is filled and packaged according to the desired packaging type.
